Ingredients:
- 175g quick oats
- 1 tsp baking powder
- 1 egg
- 200g almond butter
- 175g maple syrup
- 150g dark chocolate chips
- Flakey sea salt (optional)
Method:
- Preheat the oven to 200˚C/180˚C fan /gas mark 6 and line an 8x8 baking dish with parchment paper.
- Add the oats and baking powder to a large bowl and mix to combine.
- In a jug, whisk the egg, then stir in the almond butter and maple syrup.
- Tip the contents of the jug into the bowl of dry ingredients and mix well to combine. Stir in half the chocolate chips.
- Add the mixtureto the lined baking dish and scatter the remaining chocolate chips over the top.
- Bake for 30 minutes, remove from the oven and top with a little flaky salt if using.
- Allow to cool completely before slicing into nine squares.
- - These bars can be kept in an airtight container in the fridge for up to three days. Make sure they’re completely cooled before covering or refrigerating.
