Better-for-you oaty chocolate chip bars

Ingredients:
  • 175g quick oats
  • 1 tsp baking powder
  • 1 egg
  • 200g almond butter
  • 175g maple syrup
  • 150g dark chocolate chips
  • Flakey sea salt (optional)
Method:
  1. Preheat the oven to 200˚C/180˚C fan /gas mark 6 and line an 8x8 baking dish with parchment paper.
  2. Add the oats and baking powder to a large bowl and mix to combine.
  3. In a jug, whisk the egg, then stir in the almond butter and maple syrup.
  4. Tip the contents of the jug into the bowl of dry ingredients and mix well to combine. Stir in half the chocolate chips.
  5. Add the mixtureto the lined baking dish and scatter the remaining chocolate chips over the top.
  6. Bake for 30 minutes, remove from the oven and top with a little flaky salt if using.
  7. Allow to cool completely before slicing into nine squares.
  8. - These bars can be kept in an airtight container in the fridge for up to three days. Make sure they’re completely cooled before covering or refrigerating.
