Ingredients:
- Crackers or crusty bread for dipping
- Fresh thyme leaves, optional
- Handful of walnuts, lightly toasted
- 2-3 tbsp honey
- Fresh blackberries
- 100g feta, crumbled
- 250g full-fat Greek yoghurt
- Zest of half a lemon
- 1 tbsp lemon juice
- Salt and pepper to season
Method:
- To make the whipped feta, add all the ingredients to a blender and blitz until smooth.
- Serve family style on a large serving plate. To assemble, spread the whipped feta onto the plate, leaving a slight indent in the centre. Add the blackberries and walnuts, and drizzle the honey over the top. Finish with a sprinkling of fresh thyme leaves and serve with crackers or crusty bread for dipping.
