Warm spring greens with lemon dressing

Ingredients:
  • 250g courgette, halved and quartered lengthways
  • 200g green beans, trimmed
  • 250g frozen peas
  • For the dressing:
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Handful of fresh parsley, roughly chopped
Method:

1. For the dressing, whisk together the oil and lemon juice. Stir in the parsley and season with salt and black pepper.
2. Bring a large pan of water to the boil. Add the green beans and cook for one minute. Add the courgettes and peas and cook for another 2-3 minutes until everything is just tender.
3. In a large bowl, gently toss the vegetables with the dressing. Serve immediately.
