Ingredients:
- u00bc tsp cayenne pepper
- 50g sour cream
- 170g cream cheese
- Salt and black pepper
- 3 spring onions, chopped
- 2 roasted red peppers, drained well, chopped
- 190g chopped thawed frozen spinach, drained well
- 25g Parmesan cheese, grated
- 30g white cheddar cheese, grated
- 1 garlic clove, crushed
Method:
- Preheat the oven to 180°C/160°C fan/gas mark 4. Lightly oil a small baking dish and set aside.
- Mix the cream cheese and sour cream together in a medium bowl until well-combined. Add the garlic, most of the cheeses, all the spinach, red peppers, and spring onions. Season with salt, black pepper and cayenne pepper and fold everything together to combine.
- Spoon the mixture into the baking dish and sprinkle over the remaining cheese. Bake for 25-30 minutes until bubbling and golden. Can be eaten warm or cold with your favourite crackers, sourdough toasts or crudité.
