Warm spinach and red pepper cheese dip

Ingredients:
  • u00bc tsp cayenne pepper
  • 50g sour cream
  • 170g cream cheese
  • Salt and black pepper
  • 3 spring onions, chopped
  • 2 roasted red peppers, drained well, chopped
  • 190g chopped thawed frozen spinach, drained well
  • 25g Parmesan cheese, grated
  • 30g white cheddar cheese, grated
  • 1 garlic clove, crushed
Method:

1. Preheat the oven to 180°C/160°C fan/gas mark 4. Lightly oil a small baking dish and set aside.
2. Mix the cream cheese and sour cream together in a medium bowl until well-combined. Add the garlic, most of the cheeses, all the spinach, red peppers, and spring onions. Season with salt, black pepper and cayenne pepper and fold everything together to combine.
3. Spoon the mixture into the baking dish and sprinkle over the remaining cheese. Bake for 25-30 minutes until bubbling and golden. Can be eaten warm or cold with your favourite crackers, sourdough toasts or crudité.
