Tuscan Chicken Pasta

Ingredients:
  • Penne pasta
  • Chicken fillets
  • 2 Garlic cloves
  • ? Sun dried tomatoes
  • Handful of Rocket
  • ? Cream
  • 1 small white onion
  • 1 tsp dried oregano
  • 50g finely grated Parmesan
Method:
  1. Salt water in a pot for pasta and bring to a simmer.
  2. Add 2 portions of dried pasta and cook for 12 minutes on medium heat until al dente.
  3. Sauté chopped onion in oil, add sliced chicken and cook until lightly browned. Add finely chopped garlic after and cook for another few minutes.
  4. Once chicken is cooked add herbs and seasoning, then add tomatoes, cream and butter.
  5. Add some pasta water to loosen, add half of the Parmesan, then add rocket, season to taste with black pepper and salt, and finally add more Parmesan.
  6. Add in the cooked strained pasta, toss, garnish with more Parmesan and a crack of black pepper.
