Ingredients:
- 250g mascarpone cheese
- 50ml double cream
- 1 tsp vanilla essence
- 1tsp instant coffee granules, mixed with 2-3 tbsp boiling water, left to cool
- 1 tbsp caster sugar
- Cocoa powder, for dusting
- Shortbread fingers
- Biscotti biscuits
Method:
- Mix all of the ingredients together until smooth.
- Using an spatula, spread the coffee mascarpone mixture onto your serving board. Sift cocoa powder on top and serve with an array of biscuits – biscotti offer a lovely festive, Italian touch, while shortbread and biscoff might be more popular choices if you’re feeding a crowd!
- This recipe can be prepped a few hours in advance. Before adding the cocoa powder, pop the board in the fridge and cover loosely with clingfilm.
