Ingredients:
- 2 tbsp granulated sugar
- 1/2 tsp cinnamon
- 2 medium Pink Lady apples, peeled and diced
- 2 x 320g sheets of shop-bought puff pastry
- 1 jar of salted caramel sauce
- 1 egg, whisked
Method:
- Preheat the oven to 200°C/180°C fan/gas mark 6.
- Place a medium saucepan over a medium-high heat and add one tablespoon of sugar, the cinnamon and apples. Stir together and simmer for 10 minutes, stirring occasionally until the apples soften slightly. Remove from the heat.
- Unroll your sheets of puff pastry. Use a large star-shaped cookie cutter, or cut out a large star out of a bit of cardboard and use it as a stencil, to cut out six stars from each sheet of puff pastry.
- In the centre of six stars, add a teaspoon of salted caramel sauce, followed by a teaspoon of apples. Top each with a star-shaped pastry lid, and using a fork, press the edges together.
- Using the tip of a sharp knife, cut 4-6 2cm lines into the pastry lids, pointing out from the centre.
- Lightly brush each hand pie with egg wash and sprinkle with the remaining sugar.
- Bake for 15-20 minutes until the pastry is golden and cooked through. Sift icing sugar on top to serve.
