Spicy Beanburgers

Ingredients:
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, crushed
  • 2 red chilis, chopped
  • 2 tsp curry powder
  • 2 x 400g (2 x 16oz) cans black-eyed beans or cannellini beans
  • 100g (4oz) white breadcrumbs
  • Salt and pepper
Method:

Heat the oil and fry the onion, garlic and chilli until softened. Remove from the heat and in a separate bowl, combine the onion, garlic and chilli with the rest of the ingredients, mashing the beans with a fork or briefly blending the mixture in a food processor. Season with salt and pepper. Shape the mixture into burgers, then grill or shallow fry for a few minutes on each side until crisp.
