Smoked Salmon & Herby Cream Cheese Bites

Ingredients:
  • Half a small bunch of fresh chives, chopped
  • 1 lemon, cut into 8 wedges and halved
  • 200g smoked salmon
  • 10 digestive biscuits
  • Salt and black pepper
  • 2 sprigs of fresh thyme, chopped
  • 2 sprigs of fresh parsley, chopped
  • 200g cream cheese
Method:

1. To a mixing bowl add the cream cheese, chopped parsley and thyme and a pinch of salt and pepper, mix until combined.
2. Spread approximately one tablespoon of cream cheese to each digestive, top with a slice of smoked salmon, folded to fit the biscuit.
3. Add the digestive to a serving platter with the lemon pieces and lastly garnish the salmon with the chopped chives.
