Ingredients:
- 4 blocks of egg noodles
- 1 tbsp olive oil
- 1 garlic clove, finely chopped
- 6 spring onions, chopped
- 2.5cm of ginger, peeled and finely chopped
- 1 red pepper, thinly sliced
- 2 red chilis, deseeded and thinly sliced
- 450g selection of mushrooms (button, oyster, shitake), chopped
- 3 tbsp dark soy sauce
- 2 tbsp water
- Seasoning
Method:
Cook the egg noodles as per the instructions on the packet, drain and set aside. Heat the oil in a wok and fry the ginger, garlic and spring onions for a few minutes. Then add the rest of the vegetables, the soy sauce and water and fry for a few minutes.
