Ingredients:
- 80g mozzarella (Aoifeu2019s suggestion is smoked mozzarella)
- 200g tomatoes, chopped
- u00bd cucumber, sliced
- u00bd red onion, thinly sliced
- 2 sticks chopped celery
- 1 bunch basil
- 100g cous cous
- 220mls vegetable stock
- 4 tablespoon of Aoifeu2019s homemade vinagrette dressing
- 3 tablespoons of olive oil,
- 1 u00bd tablespoons of balsamic vinegar
- 1 teaspoon of wholegrain mustard
- 1 teaspoon of honey
- 1 clove of garlic, peeled and chopped
Method:
1. Place cous cous in a large bowl and pour in the vegetable stock. Cover with cling filmand leave until light and fluffy.
2. Cut cheese into small cubes.
3. In a bowl combine the chopped tomatoes, sliced cucumber, chopped celery, and sliced onion.
4. Add the cous cous and top with cheese.
5. Drizzle with salad dressing
