Ingredients:
- 400g good-quality sausages
- 1 red onion, sliced
- 1 yellow pepper, cut into large chunks
- 4 long stalks of tomatoes on the vine
- Handful French beans
- 3 tbsp olive oil
- Salt and freshly ground black pepper
- 25g (1oz) feta cheese for serving
- Handful fresh basil leaves
Method:
Preheat the oven to 180C/350F/gas mark 4. Place the sausages in a large roasting tin or casserole dish, and arrange the rest of the ingredients except the feta cheese around them. Drizzle the olive oil over the vegetables. Season. Put the dish in the oven for 30 minutes, turning the sausages once during cooking. Check that the sausages are cooked before serving. Sprinkle some crumbled feta cheese and some basil leaves over each serving.
