Love Letter Jam Tarts

Ingredients:
  • 1x320g sheet of shop-bought puff pastry
  • 8 tsp jam of your choice
  • 1 egg, whisked
Method:
  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. Unroll your sheets of puff pastry. Cut the sheet of pastry into 8 even rectangles.
  3. Using a small heart-shaped cookie cutter, cut a piece of pastry from the centre of the right side of each rectangle. Set the excess pastry aside.
  4. Add a tsp of jam to the centre of the left side of each rectangle. Fold the right side of the pastry back over the left and use a fork to press all edges but the edge above the heart together.
  5. Use a knife to draw a line from the top two corners of to the top of the heart taking are not to cut through the pastry.
  6. Lightly brush each pastry with egg wash and bake for 15 minutes until the pastry is golden and cooked through. Sift icing sugar on top to serve.
