Ingredients:
- 500g whole wheat spaghetti
- 1tsp salted butter
- Olive oil, to drizzle
- 3 free-range chicken breasts
- 1 whole ripe avocado
- 2 rounds of feta cheese
- Salt and ground black pepper
- Zest of 1 lemon
- Bunch of fresh rocket
Method:
- Cook pasta according to the packet instructions until al dente. Drain, rinse and drizzle with olive oil.
- Butterfly the chicken breasts and season them with salt and pepper.
- Heat a grill pan and slowly fry the chicken breasts in the butter and a little olive oil until cooked through.
- Shred the chicken breasts and add them and the lemon zest to the pasta. Crumble the feta cheese into the pasta, taste and season it with salt and black pepper.
