Ingredients:
- 2 garlic cloves, crushed
- 1x400g tin of chopped tomatoes
- 6 orange/yellow peppers
- 450g beef mince
- 1 egg
- 4 slices of wholemeal bread, cubed
- 1 small onion, chopped
- 1 small tomato, diced
- 4 tbsp mustard
- 3 tbsp Worcestershire sauce
- Salt and black pepper
Method:
- Preheat the oven to 180˚C/160˚C fan/gas mark 4. Grease a small baking dish.
- Combine the beef mince, egg, bread cubes, onion, tomato, garlic, tomatoes, mustard, Worcestershire sauce, salt and pepper in a bowl.
- Slice the tops off of the peppers and scoop out the seeds and membranes. Use a small, sharp knife to carve jack-o’-lantern faces into the peppers. Stuff the peppers lightly with the beef mixture and place them into the prepared baking dish so they lean against each other.
- Bake in the oven for about one hour until the peppers are tender and the stuffing is cooked through and juicy.
