- 2 eggs
- 35ml whole milk
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- ½ tsp caster sugar
- 1 tbsp butter
- 3 hot cross buns, sliced in half
- 30g butter
- 2 firm bananas, thickly sliced
- 2 tbsp brown sugar
- ½ tsp cinnamon
- To serve - Icing sugar and maple syrup
1. Whisk the eggs, milk, cinnamon, vanilla and sugar in a shallow bowl.
2. Heat some of the butter in a frying pan over a medium heat. Working one hot cross bun at a time, dip into the eggy mixture until both sides are covered.
3. Cook the two halves of hot cross buns for 2-3 minutes per side until golden brown.
4. While the hot cross buns are cooking, prepare the caramelised bananas. Melt the butter in a separate frying pan over a medium-low heat. Add the bananas and sprinkle over the brown sugar. Cook for five minutes until golden and syrupy.
5. Sprinkle with cinnamon, if desired.
6. Once all of the hot cross buns are cooked and all of the bananas are caramelised, serve immediately with a drizzle of maple syrup and a sprinkle of icing sugar.
