Ingredients:
- 2 eggs
- 35ml whole milk
- ½ tsp ground cinnamon
- ½ tsp vanilla extract
- ½ tsp caster sugar
- 1 tbsp butter
- 3 hot cross buns, sliced in half
- 30g butter
- 2 firm bananas, thickly sliced
- 2 tbsp brown sugar
- ½ tsp cinnamon
- To serve - Icing sugar and maple syrup
Method:
- Whisk the eggs, milk, cinnamon, vanilla and sugar in a shallow bowl.
- Heat some of the butter in a frying pan over a medium heat. Working one hot cross bun at a time, dip into the eggy mixture until both sides are covered.
- Cook the two halves of hot cross buns for 2-3 minutes per side until golden brown.
- While the hot cross buns are cooking, prepare the caramelised bananas. Melt the butter in a separate frying pan over a medium-low heat. Add the bananas and sprinkle over the brown sugar. Cook for five minutes until golden and syrupy.
- Sprinkle with cinnamon, if desired.
- Once all of the hot cross buns are cooked and all of the bananas are caramelised, serve immediately with a drizzle of maple syrup and a sprinkle of icing sugar.
