- 50g dried blueberries
- 40g goji berries
- 50g dried cranberries
- 50g apricots, chopped
- 70g sultanas
- 1 orange, zested
- 250ml organic honey
- 3 tablespoons water
- 50ml vegetable oil
- 1 tsp ground nutmeg or allspice
- 2 tsp ground cinnamon
- 25g sesame seeds
- 50g sunflower seeds
- 50g pumpkin seeds
- 60g flaked almonds
- 50g pistachios, roughly chopped
- 50g pecans, broken
- 300g oats
1 Preheat the oven to 150°C/130°C fan/gas mark 2. Line two baking trays with baking parchment.
2 Mix all the dry ingredients together in a bowl. Gently warm the oil, water, honey and orange zest in a small saucepan over low heat until mixture becomes runny. Pour the honey mixture over the dry ingredients and stir thoroughly with a wooden spoon; the mixture will be very sticky.
3 Spread the mixture over the two trays in a thin, even layer. Bake for approximately 30 minutes until golden brown, making sure you turn the mixture every 5–10 minutes.
4 When you remove the trays from the oven, the mixture will still seem quite soft but as it cools it will begin to harden. While it is still warm, mix in the dried fruit, then leave to cool.
5 Once cool, store in an airtight container or jars. Decorate with ribbons or string and a gift tag to make the perfect edible Christmas gift.
