Ingredients:
- 650g fillets of cod or haddock
- 1 teaspoon paprika
- u00bd teaspoon onion powder
- 1 tablespoon chili powder
- 1 teaspoon oregano
- u00bd teaspoon cumin
- u00bd teaspoon pepper
- u00bd teaspoon garlic powder
- u00bd teaspoon salt
- 1 avocado, sliced
- 8 corn or flour tortillas
- 1 lime, wedged
Method:
- In a small bowl, mix all sauce ingredients and set aside.
- Take another bowl and mix together all rub ingredients.
- Rub fillets with the prepared rub mixture.
- Place fish in a pan lined with parchment paper and drizzle with oil.
- Bake in a preheated oven at 205 C, until fish is flaky and cooked through, for about 12-15 minutes.
- Heat tortillas as per directions mentioned in the package.
- Once fish is baked, break it into large chunks and divide between tortillas.
- Serve with the prepared sauce.
