Easy Sausage Pasta

Ingredients:
  • Olive oil
  • 2 cloves garlic, finely chopped
  • 1 onion, chopped
  • 8 good-quality Cumberland sausages, sliced
  • 1 green pepper
  • 500g (1.1 pounds) fusilli pasta
  • 6 sun-dried tomatoes, chopped
  • 2 tsp dried basil
  • Parmesan cheese or cheddar, grated, for serving
Method:

Heat some olive oil in a pan and fry the garlic and onion for a few minutes. Put the pasta on to simmer. Add the pepper and pieces of sausage to the onion and garlic and fry until cooked. Then add the sun-dried tomatoes and basil and stir. Drain the pasta and add to the pan, stirring to combine. Season and serve, adding some cheese to each plateful.
