Duck with Orange Sauce

Ingredients:
  • 4 duck breasts
  • Freshly ground salt and pepper
  • 50g (20oz) butter
  • Juice of 2 large oranges
  • 200ml (8fl oz) red wine
  • 200ml (8fl oz) orange juice
  • 2 tbsp runny honey
  • 100ml (4fl oz) duck or chicken stock
Method:

Score the duck breasts with a knife and season. Melt the butter in a pan, then fry the duck breasts for about 2 or 3 minutes. Take off the heat and cover with foil to keep warm. Using the same pan, add the rest of the ingredients and simmer for five minutes. To serve, pour some sauce over each duck breast and serve with vegetables.
