Curry Beef Noodle Bowl

Ingredients:
  • 100g wholewheat noodles
  • 1 tablespoon rapeseed oil
  • 230g steak/ stewing beef, cut into cubes
  • 1 red pepper, deseeded and chopped
  • 200g mushrooms, chopped
  • 2 spring onions, peeled and chopped
  • 1 clove of garlic, peeled and finely chopped
  • a bunch of chopped basil or 3 teaspoons of dried basil
  • 250ml chicken stock
  • u00bd chilli pepper / chilli flakes
  • 2 tablespoons curry paste
Method:

1. Place a large amount of cold water into a pot.

2. Add noodles and bring to boil.

3. Cover pot, reduce heat and gently cook for 10 - 20 minutes.

4. Add oil to wok on medium to high heat.

5. Place beef evenly in the wok and brown.

6. Add peppers, mushrooms and spring onions to beef and cook for 2 - 3 minutes until slightly softened.

7. Add garlic, basil, chicken stock, chopped chilli pepper, and curry paste.

8. Simmer for 10 - 15 minutes.

9. Remove noodles from pot, drain and serve with beef noodle mixture.
