Christmas Sours

Ingredients:
  • Strip of orange zest, white pith removed
  • To garnish:
  • 1 egg white
  • 1tbsp orange juice
  • 1tbsp lemon juice
  • 60ml Jameson whiskey
  • Handful of ice cubes
  • For each cocktail:
  • 2 strips of orange zest, white pith removed
  • 1 x 3cm piece of fresh ginger, peeled and sliced
  • 200g granulated sugar
  • 200ml water
  • For the ginger and orange simple syrup:
Method:

1. First, make the simple syrup. Combine the water and sugar in a pan over a medium-high heat and stir until the sugar has dissolved. Remove from the heat, add the ginger and orange zest and allow to cool completely. After 2-3 hours, remove the ginger and zest.
2. To make each cocktail, combine the ice, whiskey, lemon juice, orange juice and egg white into a cocktail shaker. Add one tablespoon of the ginger orange simple syrup, close the lid tightly and shake very hard for 20 seconds.
3. Strain the mix into a glass filled with ice and garnish with a strip of orange zest.
Top tip; The egg white will emulsify and give a lovely foam on top of the drink, but it can easily be omitted if you prefer.
