Brandy Buttercream Mince Pie Cupcakes

Ingredients:
  • 12 Kake & Co. All - Butter Shortcrust Mince Pies
  • 2 tbsp of brandy
  • 400g icing sugar
  • 200g butter
Method:
  1. To make the buttercream, place the butter and icing sugar in a bowl and beat together with a spoon or electric hand whisk.
  2. When the buttercream starts to come together, add the brandy and mix until smooth. If the buttercream is too stiff to pipe, beat in a splash of milk.
  3. Transfer the buttercream into a piping bag fitted with a star-shaped nozzle and pipe it in swirls onto the tops of the mince pies
