Boxty Brekkie

Ingredients:
  • 1kg potatoes
  • 300ml buttermilk, plus a splash extra
  • 150g plain flour
  • 1 tsp salt
  • Pinch of sugar
  • u00bc tsp bicarbonate of soda
  • 10 sausages
  • 200g cherry tomatoes on the vine
  • Olive oil, for drizzling
  • Salt and black pepper
  • Butter, for greasing and cooking
  • Vegetable oil, for cooking
  • 10 eggs
Method:

1. Preheat the oven to 200˚C/180˚C fan/gas mark 6 and grease a large loaf tin with butter. Grate the potatoes into a clean cloth or tea towel and then squeeze as much liquid out as possible.
2. Place the grated potato in a large bowl and add the buttermilk, flour, salt and a pinch of sugar. Stir to combine into a thick batter
3. Mix the bicarbonate of soda with a splash of buttermilk and stir into the potato mixture. Transfer to the prepared tin and bake for 60 minutes or until a skewer inserted in the centre comes out clean. Remove the boxty from the oven and allow to cool on a wire rack. Store wrapped in cling film in the fridge for up to five days. On Christmas morning, cut 10 thick slices of boxty.
4. For the eggs, pour oil into a rimmed baking tray to a depth of about ½cm. Place the tray in the oven and preheat to 200˚C/180˚C fan/gas mark 6.
5. Place 10 sausages in a large non-stick roasting tin and roast for 10 minutes. Remove the tin from the oven and shake to distribute the fat in the bottom. Add the cherry tomatoes, drizzle with a little olive oil and toss to coat. Season with salt and black pepper and return to the oven for 15-16 minutes until the sausages are cooked through.
6. Meanwhile, carefully remove the tray of hot oil from the oven and quickly crack the eggs into the oil, starting from the centre of the tray and working out towards the edges. Sprinkle with salt and pepper, then return to the oven. Bake for 7-8 minutes for runny yolks or until cooked to your liking. Use a thin spatula to remove the eggs from the pan.
7. Heat a knob of butter in a large pan over a medium-high heat and fry the boxty until golden brown on both sides. Serve each slice with one egg, one sausage and a few cherry tomatoes.
