Bacon Avocado Bombs

Ingredients:
  • 2 Small Avocados, peeled and halved, pit taken out
  • 75g Red Cheddar, grated
  • 1g Fresh Parsley, finely chopped
  • 2 TBLS Tomato, chopped
  • Salt & Pepper
  • 8 to 10 slices Bacon, Streaky or Back
Method:

1. Heat the grill and line a baking tray with foil. Fill 2 halves with cheddar, parsley & tomato. Season with salt and pepper. Top each half with the other half of avocado.
2. Wrap each avocado with 4 slices of bacon to cover completely. Bacon should hold together but if you worried then secure with a toothpick.
3. Place the avocados on the baking tray and grill until the bacon is crispy, about 5 minutes. Carefully, turn the avocado over and cook the other side until crispy all over.
4. Cut in half crosswise and serve immediately.
