Asian barbequed steak with broccoli and baby gem lettuce

Ingredients:
  • u2022t50ml Coca-Cola Zero Sugar u2022t4 tbsp brown sugar u2022t4 tbsp rice wine vinegar or cider vinegar u2022t4 cloves garlic minced u2022t2 u00bdcm fresh ginger, peeled and grated u2022t1 red chilli, seeded and finely chopped u2022t3 tbsp sesame oil u2022t1 tbsp sesame seeds u2022t4 sirloin steaks, roughly 150g per portion u2022t600g broccoli, cut into florets u2022t2 baby gem lettuce cut in half lengthwise u2022tSmall bunch coriander leaves only
Method:


  1. To make the Asian BBQ sauce, heat the Coca-Cola Zero Sugar and the brown sugar in a pot until the sugar dissolves. Allow to simmer until the colour becomes a little deeper.

  2. Carefully add 4 tbsp of rice wine vinegar (or cider vinegar) and 3 tbsp of soy sauce, standing well back as it will splutter when you add the liquid.

  3. Add the garlic, ginger, ½ the red chilli, and 1 tbsp of the sesame oil, stir well and cook gently for 5 minutes. Allow to cool.

  4. Put the sirloin steak into a ziplock bag, add the cooled marinade, mix well into the steak so that it is fully coated, and leave to marinade for 30 minutes or longer.

  5. Make the dressing for the vegetables by my mixing the remaining 2 tbsp sesame oil with 1 tbsp soy sauce.

  6. Oil 2 disposable tinfoil trays with 1 tbsp vegetable oil and put the broccoli and baby gem lettuce on the trays. Sprinkle over a pinch of salt and pepper.

  7. Preheat the BBQ for a medium heat, and lightly oil the grill.

  8. Remove the steak from the marinade and discard the used marinade.

  9. Put the trays with the vegetables and the steak on the BBQ for 6-7 minutes, turning the steak halfway (reduce the cooking time for the steak if you like it rarer than medium, increase it if you like it more well done). The vegetables should be starting to char around the sides.

  10. Remove the vegetables to a serving plate, pour over the dressing and toss together with 1 tbsp sesame seeds, the remainder of the chilli and the coriander leaves.

  11. Slice the steak into strips and serve with the vegetables.


OR

If BBQ is not an option, the steak and vegetables can be cooked on a griddle pan or hot frying pan following the same method.
