Ingredients:
- 3 carrots, grated
- 1 green apple, grated
- 1 large handful fresh coriander, chopped
- 120g plain low-fat yoghurt
- 30ml lemon juice
- u00bd tsp ground cumin
- Salt and black pepper
- For the pittas:
- 4 large wholemeal pitas
- 4-8 slices of turkey
- Butterhead lettuce, chopped
Method:
- In a large bowl, combine the carrots, apple and coriander.
- In a jar, combine the yoghurt, lemon juice, cumin and a pinch each of salt and black pepper. Cover with the lid and shake to blend. Taste and add more seasoning if desired.
- Stir the dressing into the salad mixture.
- To serve, fill each pitta with 1-2 slices of turkey, a small handful of chopped lettuce and some of the apple and carrot salad.
