Ginger Sparkler

Ingredients:
  • 120ml vodka
  • 60g fresh ginger, peeled and sliced
  • 100g sugar
  • 120ml water
  • 1 x 750ml bottle of Prosecco or Champagne
  • 3 tbsp candied ginger, cut into cubes
  • 1 lemon, sliced into wedges
  • 2 tbsp sugar
Method:

1. Simmer the water, sugar and ginger for the syrup in a small saucepan over a medium-low heat for 10 minutes. Remove from the heat and stir in the vodka.
2. Chill for at least two hours. When ready to serve, strain to remove the ginger pieces.
3. Spread the two tablespoons of sugar into a thin layer on a plate. Coat the rim of the glass with the juice from the lemon wedge and immediately dip into the sugar to coat the rim.
4. Add a few pieces of candied ginger to each glass. Pour in one tablespoon of the ginger syrup and top with the sparkling wine.
