Ingredients:
- 2 tsp flaky sea salt
- 1 tsp chilli flakes
- 3 lime wedges
- 200ml mango juice
- 100ml vodka
- 60ml fresh lime juice (about 2 limes)
- 200ml sparkling water
- Ice
Method:
- Mix the flaky sea salt and the chilli flakes together on a small flat plate. Run a lime wedge around the rim of each glass, then press the rim into the chilli salt mixture to coat. Set the glasses aside.
- Fill both rimmed glasses generously with ice cubes so they're ready to pour into straight away.
- Add mango juice, vodka and fresh lime juice to a cocktail shaker or a jar, and add a handful of ice. Stir or shake well for about 10 seconds until combined and nicely chilled.
- Strain or pour the mixture over the ice in your prepared glasses. Top each one with sparkling water and give it a very gentle stir.
- Finish each glass with a wedge of lime on the rim. Serve immediately.
- Can’t find mango juice? Tropical or fruit juice works just as well and tastes delicious!
- To make it a mocktail, leave out the vodka and add a little extra mango juice and a splash of ginger beer instead.
- To batch for a crowd, simply multiply the ingredients and mix in a large jug — just add the sparkling water right before serving to keep the fizz.
