Mango & Chilli Vodka Fizz

Ingredients:
  • 2 tsp flaky sea salt
  • 1 tsp chilli flakes
  • 3 lime wedges
  • 200ml mango juice
  • 100ml vodka
  • 60ml fresh lime juice (about 2 limes)
  • 200ml sparkling water
  • Ice
Method:
  1. Mix the flaky sea salt and the chilli flakes together on a small flat plate. Run a lime wedge around the rim of each glass, then press the rim into the chilli salt mixture to coat. Set the glasses aside.
  2. Fill both rimmed glasses generously with ice cubes so they're ready to pour into straight away.
  3. Add mango juice, vodka and fresh lime juice to a cocktail shaker or a jar, and add a handful of ice. Stir or shake well for about 10 seconds until combined and nicely chilled.
  4. Strain or pour the mixture over the ice in your prepared glasses. Top each one with sparkling water and give it a very gentle stir.
  5. Finish each glass with a wedge of lime on the rim. Serve immediately.
  6. Can’t find mango juice? Tropical or fruit juice works just as well and tastes delicious!
  7. To make it a mocktail, leave out the vodka and add a little extra mango juice and a splash of ginger beer instead.
  8. To batch for a crowd, simply multiply the ingredients and mix in a large jug — just add the sparkling water right before serving to keep the fizz.
