Whipped feta with blackberries, walnuts & honey

Ingredients:
  • Crackers or crusty bread for dipping
  • Fresh thyme leaves, optional
  • Handful of walnuts, lightly toasted
  • 2-3 tbsp honey
  • Fresh blackberries
  • 100g feta, crumbled
  • 250g full-fat Greek yoghurt
  • Zest of half a lemon
  • 1 tbsp lemon juice
  • Salt and pepper to season
Method:
  1. To make the whipped feta, add all the ingredients to a blender and blitz until smooth.
  2. Serve family style on a large serving plate. To assemble, spread the whipped feta onto the plate, leaving a slight indent in the centre. Add the blackberries and walnuts, and drizzle the honey over the top. Finish with a sprinkling of fresh thyme leaves and serve with crackers or crusty bread for dipping.
