Ingredients:
- 250g ricotta
- 1 tbsp olive oil
- ½ teaspoon salt
- Zest of half a lemon
- 1 tsp lemon juice
- 2 tbsp honey
- 1 tsp cracked black pepper
- 10-12 seedy crackers
- 6 pieces of prosciutto
- Crushed pistachios, optional
Method:
- Add all the ricotta, olive oil, salt, zest of a lemon, lemon juice, honey and cracked black pepper to a food processor/blender and blitz until smooth. A stick blender can also be used. Set aside.
- Add the seedy crackers to a serving plate, add a dollop of the honey-whipped ricotta to each cracker. Take individual pieces of prosciutto, roll them into curls, and add one to each cracker.
- Sprinkle each one with crushed pistachios if using and serve as delicious starters or party canapés.
- Top tip: The honey-whipped ricotta can be made a day in advance. Refrigerate it in an airtight container until you’re ready to assemble. Take care to drain any excess liquid from the ricotta before using and give it a good mix before adding it to the crackers.
