- 250g ricotta
- 1 tbsp olive oil
- ½ teaspoon salt
- Zest of half a lemon
- 1 tsp lemon juice
- 2 tbsp honey
- 1 tsp cracked black pepper
- 10-12 seedy crackers
- 6 pieces of prosciutto
- Crushed pistachios, optional
1. Add all the ricotta, olive oil, salt, zest of a lemon, lemon juice, honey and cracked black pepper to a food processor/blender and blitz until smooth. A stick blender can also be used. Set aside.
2. Add the seedy crackers to a serving plate, add a dollop of the honey-whipped ricotta to each cracker. Take individual pieces of prosciutto, roll them into curls, and add one to each cracker.
3. Sprinkle each one with crushed pistachios if using and serve as delicious starters or party canapés.
Top tip: The honey-whipped ricotta can be made a day in advance. Refrigerate it in an airtight container until you’re ready to assemble. Take care to drain any excess liquid from the ricotta before using and give it a good mix before adding it to the crackers.
