Ingredients:
- 5 fresh figs, cut into slices
- 4cm ginger, peeled and cut into slices
- 250ml water
- 200g caster sugar
- 50ml Tanqueray Non Alcoholic Gin
- 25ml lime juice
- Tonic water or ginger beer
- Fresh figs and rosemary
Method:
- To make the syrup, add the water, sugar, figs and ginger to a saucepan over a medium heat. Bring to a boil, reduce the heat and allow it to simmer for roughly 15 minutes, stirring until the sugar has dissolved completely. Remove from the heat, set aside and allow to cool.
- Chill your glass by placing it in the fridge or freezer while you make the drink.
- To make the cocktail, add the gin, lime juice and 2 tablespoons of the fig and ginger syrup to a cocktail shaker, top with ice, seal it with a lid or glass and shake vigorously for about 30 seconds.
- Add a few ice cubes to the glass, and strain the cocktail into the glass.
- Top with tonic water or ginger beer and garnish with half a fresh fig and a sprig of rosemary.
- Top tips:
- You will have additional fig and ginger syrup for additional cocktails. Store it in a sealed bottle or jar in the fridge for up to one month.
