Fig & Ginger Gin Fizz (Non-Alcoholic)

Ingredients:
  • 5 fresh figs, cut into slices
  • 4cm ginger, peeled and cut into slices
  • 250ml water
  • 200g caster sugar
  • 50ml Tanqueray Non Alcoholic Gin
  • 25ml lime juice
  • Tonic water or ginger beer
  • Fresh figs and rosemary
Method:

1. To make the syrup, add the water, sugar, figs and ginger to a saucepan over a medium heat. Bring to a boil, reduce the heat and allow it to simmer for roughly 15 minutes, stirring until the sugar has dissolved completely. Remove from the heat, set aside and allow to cool.
2. Chill your glass by placing it in the fridge or freezer while you make the drink.
3. To make the cocktail, add the gin, lime juice and 2 tablespoons of the fig and ginger syrup to a cocktail shaker, top with ice, seal it with a lid or glass and shake vigorously for about 30 seconds.
4. Add a few ice cubes to the glass, and strain the cocktail into the glass.
5. Top with tonic water or ginger beer and garnish with half a fresh fig and a sprig of rosemary.

Top tips:
You will have additional fig and ginger syrup for additional cocktails. Store it in a sealed bottle or jar in the fridge for up to one month.
