Ingredients:
- 200g white chocolate, broken into chunks
- 4 medium-large ripe bananas
- 100g desiccated coconut
- Handful of dark chocolate drops
Method:
- In a small bowl, gently melt the chocolate in the microwave in short bursts on medium heat, stirring as you go. Set aside for a moment while you get the bananas prepped.
- Peel the bananas, cut in half, and push a lollipop stick into the middle of each piece. Spread the coconut out in a shallow bow or on a tray. Lay a sheet of baking parchment on a tray or plate and make sure there is room for it in the freezer.
- Using a pastry brush, coat a banana half in chocolate, letting excess drip away. Roll the banana in the coconut until coated, then set it on the prepared sheet. Repeat with the remaining banana halves.
- Decorate each with chocolate drops for eyes and mouths. If you like, you can even cut a few little eyebrows from chocolate drops, for added expression!
- Freeze the lollies for at least a few hours; they would easily last a week in the freezer.
