Apple & Carrot Salad Pittas

Ingredients:
  • 3 carrots, grated
  • 1 green apple, grated
  • 1 large handful fresh coriander, chopped
  • 120g plain low-fat yoghurt
  • 30ml lemon juice
  • u00bd tsp ground cumin
  • Salt and black pepper
  • For the pittas:
  • 4 large wholemeal pitas
  • 4-8 slices of turkey
  • Butterhead lettuce, chopped
Method:


  • In a large bowl, combine the carrots, apple and coriander.

  • In a jar, combine the yoghurt, lemon juice, cumin and a pinch each of salt and black pepper. Cover with the lid and shake to blend. Taste and add more seasoning if desired.

  • Stir the dressing into the salad mixture.

  • To serve, fill each pitta with 1-2 slices of turkey, a small handful of chopped lettuce and some of the apple and carrot salad.
