Ingredients:
- Olive oil
- 2 cloves garlic, finely chopped
- 1 onion, chopped
- 8 good-quality Cumberland sausages, sliced
- 1 green pepper
- 500g (1.1 pounds) fusilli pasta
- 6 sun-dried tomatoes, chopped
- 2 tsp dried basil
- Parmesan cheese or cheddar, grated, for serving
Method:
Heat some olive oil in a pan and fry the garlic and onion for a few minutes. Put the pasta on to simmer. Add the pepper and pieces of sausage to the onion and garlic and fry until cooked. Then add the sun-dried tomatoes and basil and stir. Drain the pasta and add to the pan, stirring to combine. Season and serve, adding some cheese to each plateful.
