Mushroom Noodles

Ingredients:
  • 4 blocks of egg noodles
  • 1 tbsp olive oil
  • 1 garlic clove, finely chopped
  • 6 spring onions, chopped
  • 2.5cm of ginger, peeled and finely chopped
  • 1 red pepper, thinly sliced
  • 2 red chilis, deseeded and thinly sliced
  • 450g selection of mushrooms (button, oyster, shitake), chopped
  • 3 tbsp dark soy sauce
  • 2 tbsp water
  • Seasoning
Method:

Cook the egg noodles as per the instructions on the packet, drain and set aside. Heat the oil in a wok and fry the ginger, garlic and spring onions for a few minutes. Then add the rest of the vegetables, the soy sauce and water and fry for a few minutes.
