Ingredients:
- 4 tbsp olive oil
- 1 garlic clove, finely chopped
- 240ml (8 1/2fl oz) single cream
- 70g (2 1/2oz) butter
- 300g 11oz Porcini mushrooms, sliced
- 400g 16oz spaghetti
- salt and freshly ground black pepper
- A few basil leaves, to serve
- Parmesan, grated, to serve
Method:
Heat the olive oil in a large pan, add the garlic and fry for a minute or so. Add the porcini, salt and black pepper, cover and simmer for about 10 minutes stirring occasionally. Meanwhile, put the spaghetti on to simmer. Add the butter and cream to the mushrooms on a low heat. Season. Drain the spaghetti and add to the porcini mixture. Sprinkle each portion with Parmesan and garnish with basil leaves.
