Chicken with Steamed Veggies

Ingredients:
  • 1 tbsp honey
  • 50ml (1 3/4fl oz) soy sauce
  • 50ml (1 3/4fl oz) dry sherry
  • 2 tsp fresh ginger root, grated
  • 1 garlic clove, crushed
  • 200g (8oz) chicken fillets, cut into strips
  • 1 small red onion, divided into rings
  • 100g (4oz) mushrooms, sliced
  • 1 green pepper, sliced
  • salt and pepper
  • 2 tsp sesame seeds
Method:

Preheat the oven to 200C/400F/gas mark 6. Make a bag using a piece of foil, folded double at the sides. Leave the top open to fill the bag. To prepare the sauce, combine the honey, soy sauce, sherry, ginger and garlic. Put the chicken strips in the sauce to marinate. Season the vegetables with salt, pepper and sesame seeds. Put the vegetables in the bottom of the aluminium bag and place the chicken on top. Pour the sauce over the ingredients. Close the aluminium bag and put it in the preheated oven, leaving it to steam for 20 minutes.
