Chicken Satay

Ingredients:
  • Olive oil
  • 4-6 chicken breasts (depending on size), cut into 2cm strips
  • Long wooden skewers
  • 2 cloves garlic, finely chopped
  • A thumbnail's length of ginger, finely chopped
  • 8 tbsp crunchy peanut butter
  • 4 tbsp dark soy sauce
  • 4 tsp brown sugar
  • 2 tbsp hot water
Method:

Thread the chicken onto the skewers, and grill the chicken for about 8 minutes on each side. Meanwhile, fry the garlic and ginger in a pan, then add the peanut butter, soy sauce and sugar. Stir until it dissolves, then add the hot water. Serve with the chicken skewers.
