All-in-One Fish Bake

Ingredients:
  • 4 x 175g (6oz) thick portions cod or haddock
  • 2 courgettes, sliced
  • 2 tbsp olive oil
  • 12 cherry tomatoes
  • 125g (4 1/2oz) green beans, topped and tailed
  • 8 black olives, pitted
  • Salt and black pepper
Method:

Preheat the oven to 200C/400F/gas mark 6. Place the cod and courgettes into a large roasting tray and drizzle with half the oil. Roast for 5 minutes. Add the cherry tomatoes, green beans and olives. Season and drizzle with the remaining oil. Roast for a further 15 minutes or until the cod is cooked and vegetables slightly softened. Serve immediately.
