Ingredients:
- 1 medium whole Irish quality chicken
- 2 tbsp olive oil
- Grated zest of 1 lemon
- Sea salt and freshly ground black pepper
- 1 red pepper, deseeded and quartered
- 1 green pepper, deseeded and quartered
- 4 courgettes, cut into large chunks
- 4 tomatoes, halved lengthways
- 3 garlic cloves, halved
- Fresh thyme, to garnish
Method:
Preheat the oven to 190C/375F/gas mark 5. Place the chicken in a roasting pan and brush with a tablespoon of olive oil. Sprinkle over the lemon zest and season with the salt and pepper. Arrange the peppers, courgettes, and garlic around the edge. Drizzle the remaining oil over the vegetables and season well. Roast for 20 minutes per 500g, plus an extra 20 minutes. Serve the chicken surrounded with all the vegetables and garnished with thyme.
