Ingredients:
- 235g rolled oats
- 2 eggs
- 120g apple sauce (unsweetened)
- 237mls skim milk
- 15g ground flaxseed
- 1 u00bd teaspoon baking powder
- 1 u00bd teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- u00bc teaspoon salt
- 90g blueberries
- 50g brown sugar
Method:
1. Preheat oven to 175 degrees C / Gas Mark 4.
2. Mix oats, eggs, blueberries, applesauce, brown sugar, skim milk, flaxseed meal, baking powder, cinnamon, vanilla and salt together in a large bowl.
3. Pour into a 9x13inch baking dish.
4. Bake in preheated oven until the moisture is absorbed and the oats are tender (25 to 30 minutes)
5. When cooled cut into 15 equal portions.
