Turkey and cheese pizza pockets

Ingredients:
  • 2 sheets of puff pastry, (thawed if frozen)
  • 1 SPAR egg
  • 1 tbsp water
  • 6 tbsp pizza sauce
  • 150g turkey slices, chopped
  • 100g SPAR Cheddar, grated
  • 100g SPAR mozzarella, grated
  • ½ bell pepper, sliced thinly
  • 1 tsp mixed herbs
Method:
  1. Preheat the oven to 220˚C/200˚C fan/gas mark 7 and line a baking tray with parchment paper. Slice each pastry sheet into three equal parts.
  2. Crack the egg into a bowl and mix it with the water. Use a pastry brush or a spoon to spread the egg around the edges of each pastry piece.
  3. Spread one tablespoon of the pizza sauce onto half of each pastry strip.
  4. Sprinkle the turkey and cheese on top, making sure not to cover the parts where the egg was spread.
  5. Top with a sprinkle of mixed herbs and a few slices of bell pepper.
  6. Cover each pizza square with its pastry lid, making sure the egg sides are pressing against each other. Use the back of a fork to crimp the edges together. This helps keep them sealed and prevents any of the filling from leaking out.
  7. Brush over a bit more of the beaten egg mixture, then place on the baking tray. Bake for 10-15 minutes until browned on top.
  8. Pop into a lunchbox or store in the freezer. If freezing, take out to defrost the night before and pop into a preheated oven or an air fryer for 3-5 minutes the next morning to crisp up again.
