Ingredients:
- 2 sheets of puff pastry, (thawed if frozen)
- 1 SPAR egg
- 1 tbsp water
- 6 tbsp pizza sauce
- 150g turkey slices, chopped
- 100g SPAR Cheddar, grated
- 100g SPAR mozzarella, grated
- ½ bell pepper, sliced thinly
- 1 tsp mixed herbs
Method:
- Preheat the oven to 220˚C/200˚C fan/gas mark 7 and line a baking tray with parchment paper. Slice each pastry sheet into three equal parts.
- Crack the egg into a bowl and mix it with the water. Use a pastry brush or a spoon to spread the egg around the edges of each pastry piece.
- Spread one tablespoon of the pizza sauce onto half of each pastry strip.
- Sprinkle the turkey and cheese on top, making sure not to cover the parts where the egg was spread.
- Top with a sprinkle of mixed herbs and a few slices of bell pepper.
- Cover each pizza square with its pastry lid, making sure the egg sides are pressing against each other. Use the back of a fork to crimp the edges together. This helps keep them sealed and prevents any of the filling from leaking out.
- Brush over a bit more of the beaten egg mixture, then place on the baking tray. Bake for 10-15 minutes until browned on top.
- Pop into a lunchbox or store in the freezer. If freezing, take out to defrost the night before and pop into a preheated oven or an air fryer for 3-5 minutes the next morning to crisp up again.
